Hey! We are Mike and Eunice Coughlin and we are the owners of Cafe Ybor Food Bus.
Cafe Ybor Food Bus was officially started in June 2014 but our story actually began a long time before that. Mike has over 30 years experience in the restaurant and hospitality industry and always had the dream of owning his own restaurant. In late 2013, we started to put together a plan to break away from the “corporate grind” and actually make his dream come true! In June 2014, Mike left his corporate job and started building “Molly Lu”, the name we gave our food truck in honor of both of our mother’s – Molly and Lucille (Mike’s mom).
From Austin, TX to Jacksonville, FL
When we first started our food truck, we moved to Austin from Florida to be near family in Central Texas and the area appealed to us as a place to build our dream since food trucks are so popular there. At the beginning of 2020, COVID happened and we decided to return to Florida and now here we are in Jacksonville! We are feeling very much at home here and are looking forward to meeting you soon at our window!
