Cafe Ybor Food Bus was officially started in June 2014 but our story actually began a long time before that. Mike has almost over 30 years experience in the restaurant and hospitality industry and always had the dream of owning his own restaurant. In late 2013, we started to put together a plan to break away from the “corporate grind” and actually make his dream come true! In June 2014, Mike left his corporate job and started building “Molly Lu”, the name we gave our food truck in honor of both of our mother’s – Molly and Lucille (Mike’s mom).
How Did We Wind Up in Austin, TX?
When we were first formulating our plan, we thought that Austin would be a great place to begin because we knew how popular food trucks are here and we also thought that similar to NYC, if you can make it in Austin (as a food truck) you can make it anywhere! We also had family in Central Texas and this area always appealed to us as a place to follow our dream. We actually put our house up for sale in Florida as we were planning but it wouldn’t sell. We got closer and closer to the truck being finished and just as the truck was almost complete and we were ready to start, our house sold! We thought, “well, it’s now or never”, so we accepted the deal and started packing for Texas! And the rest, as they say, is history.
