Meet Mike and Eunice Coughlin, Owners of Cafe Ybor Food Bus
Mike and Eunice in Austin, TX 2014Ybor Food Bus launched in June 2014, but our journey started well before that. With over 30 years in the restaurant and hospitality industry, we seized the opportunity in 2014 to escape the “corporate grind” and turn our dream into reality. That year, Mike left his corporate job, and we moved our operations from Florida to Austin, TX, a hotspot for food trucks. However, when COVID-19 hit in 2020, we returned to Florida, settling in Jacksonville. Here, we’ve encountered a wonderful community of people from northeast Florida, all eager to enjoy our offerings.
